It is of so yummy! The GREAT thing about this recipe is that you can substitute any fruit filling that you'd like. I made it with the caramel apple. I'm going to try blueberry next weekend.

1 (21-ounce) can apple pie filling
1 (9-inch) graham cracker crust
2 (8-ounce) packages cream cheese, at room temperature
1/2 cup sugar
1/4 teaspoon vanilla extract
2 eggs
1/4 cup caramel topping
12 pecan halves, plus 2 tablespoons chopped pecans


Preheat the oven to 350 degrees F.

Reserve 3/4 cup of the apple filling; set aside. Spoon the remaining filling into the crust. Beat together the cream cheese, sugar, and vanilla until smooth. Add the eggs and mix well. Pour this over the pie filling.

Bake for 30 to 35 minutes, or until the center of the cake is set. Cool to room temperature.

Mix the reserved pie filling and caramel topping in a small saucepan and heat for about 1 minute, or until spreadable. Spoon the apple-caramel mixture over the top of the cheesecake and spread evenly. Decorate the edge of the cake with pecan halves and sprinkle with chopped pecans. Refrigerate the cake until ready to serve.

Last cheese cake I made was Tyler Florence's ultimate cheese cake (the ultimate thing is just a thing he does, I wouldn't put much stock in it =P). It uses generous amounts of sour cream in addition to cream cheese and a water bath and it seemed to work pretty well. It had a very nice flavor. I didn't test out the topping yet though but next time I try to make it I'll add it to see how much it improves it.




American website, looked a little for metric measurements but couldn't quite find any. Bah.

As of now, I have made this cheesecake in three different ways. One was the apple caramel that I posted. I also made it with blueberry pie filling!

To make the blueberry pie filling:
2 cups of fresh blueberries
1/2 cup sugar
3 tablespoons flour
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup water

Just mix the dry ingredients and slowly stir in the water while stirring so they don't get all clumpy. Bring that to a boil and add in the blueberries, stirring constantly but very gently so you don't bust up the blueberries. Let it boil for 3-4 minutes and then you're done!

You can also make this pie filling before hand and freeze it if you want to get a head start on Christmas baking.

The other kind I made was a lemon cream cheesecake!! I cheated on this one and bought a can of lemon cream from the grocery store. Either way, it was still delicious! Nommy cheese!

This weekend I am going to try this with a chocolate walnut cream.
